Lamb chops (loin)
Loin chops are an amazing cut with an attractive “T” shaped bone that runs through the meat. Loin chops (sometimes called T-bone chops) are simple to prepare. Season with a dry rub (our favorite is Montreal Steak Seasoning), or marinate 4 to 6 hours, then grill, broil, or panfry the chops for a delicious meal. These are cut 1" thick so that you can brown both sides without overcooking the center. The left overs are amazing as well!

Lamb chops (shoulder)
Shoulder chops (also called blade and arm chops) just like loin chops require a shorter amount of cooking time than other cuts, making them a quick and flavorful choice for easy meals. We prepare these the same way as loin chops. Our cuts are 1" thick so you can brown both sides without overcooking the center.

Merguez lamb sausage
This is a spicy lamb sausage seasoned with harissa (a chili paste), cumin, chili pepper, and garlic. By grilling the sausage you get an excellent smokey flavor.

The price for a whole lamb is $8.99 per pound on the hanging weight. Hanging weights typically range from 45-70 pounds, resulting in a price range of $400 - $630 (this includes processing and USDA inspected/packaged). Please note: this is an average weight range and the final hanging weight may fall outside of this estimate. We are always able to deliver to your door if local (50 miles) or arrange for other delivery methods.
